This was the first cuvée we made for Litro Bottles and 20 L Kegs. The grapes are sourced annually from a small organic vineyard on Mount Bonifato in Alcamo - Sicily.
Zibibbo, Catarratto and Grillo macerated for 3 weeks on the skins in a steel tank.

The sensation of sinking your teeth into the cactus’s succulent ‘pears’ while taking a break from vendemmia was the inspiration behind this dry skin-contact white wine cuvée.”
